Wedding Flowers

My daughter's wedding colors are cranberry and champagne. The florists showed us centerpieces with red roses and off white flowers. Must I have flowers in my bouquet? I'd really like a bouquet made with dyed onion grass, feathers, and other similar non-traditional, but elegant, floral materials. I've never been a "flower person" but I don't know how I would even achieve my personalized bouquet.
